Ingredients

Scale
  • 8 oz Brie cheese, at room temperature
  • 6 oz Aged gouda, sliced into thin wedges
  • 4 oz Blue cheese, crumbled or sliced
  • 4 oz Manchego, cut into small triangles
  • 6 oz Prosciutto, thinly sliced and folded into ribbons
  • 4 oz Salami, sliced into thin rounds
  • 4 oz Soppressata, cut into half moons
  • 6–8 Fresh figs, halved lengthwise
  • 2 Green apples, sliced thin and tossed with lemon juice
  • 1 cup Red grapes, washed and left in small clusters
  • 1 large Pear, sliced (Bosc or Bartlett)
  • ½ cup Dried apricots
  • ¼ cup Fig jam or quince paste
  • 2 tablespoons Honey
  • ½ cup Mixed nuts (candied pecans and Marcona almonds)
  • 3–4 Fresh rosemary sprigs
  • 1 box Water crackers
  • 1 Baguette, sliced thin
  • ¼ cup Cornichons

Instructions

  1. Start with the bowls. Place small bowls or ramekins of fig jam, honey, and cornichons on the board to anchor the layout.
  2. Add the cheeses. Place the brie wheel in the center left, aged gouda in the upper right, blue cheese crumbles near the bottom, and manchego triangles scattered throughout. Cut the brie into a few slices before placing it on the board.
  3. Layer the meats. Fold prosciutto into loose ribbons and place near the brie. Fan out salami rounds next to the gouda. Arrange soppressata half moons near the blue cheese.
  4. Scatter the fruits. Place halved figs in small groups, fan apple slices near the manchego, tuck grape clusters into empty spaces, lay pear slices near the honey bowl, and sprinkle dried apricots in gaps.
  5. Add the nuts and pickles. Scatter candied pecans and Marcona almonds in small piles throughout the board. Place cornichons near the salami.
  6. Garnish and serve. Tuck fresh rosemary sprigs between cheese and fruit clusters. Drizzle honey over the brie wheel just before serving. Arrange crackers and baguette slices around the perimeter or on a separate plate.

Notes

Bring cheese to room temperature at least 30 minutes before serving. Slice apples right before serving to prevent browning. Don’t overthink the arrangement; a beautiful mess looks intentional. Make extra of everything as boards disappear quickly. Use water crackers for mild cheeses and thin baguette slices for spreads.
