This creamy buffalo chicken dip with blue cheese is a quick and easy 5-ingredient recipe perfect for game days, parties, or lazy Sunday snacking. It comes together in under 20 minutes and features a perfect balance of spicy buffalo sauce, creamy base, and tangy blue cheese.

Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup blue cheese dressing or crumbled blue cheese
  • 2 cups cooked, shredded chicken (rotisserie or leftover)
  • 1 cup shredded mozzarella cheese (low-moisture, part-skim)

Instructions

  1. Preheat your oven to 375°F (190°C). Let the cream cheese soften on the counter.
  2. In a mixing bowl, combine the softened cream cheese and 1/2 cup buffalo wing sauce. Use a hand mixer on medium speed (or a sturdy wooden spoon) until completely smooth and uniform, about 2 minutes with a mixer or 4-5 minutes by hand. Scrape down the sides of the bowl halfway through.
  3. Fold in 1/2 cup blue cheese dressing or crumbled blue cheese. If using dressing, stir until fully incorporated. If using crumbles, leave a few chunks intact for bursts of flavor.
  4. Add 2 cups shredded chicken and 1 cup shredded mozzarella cheese. Stir until everything is evenly distributed.
  5. Spread the mixture into a greased 9-inch baking dish or small skillet. Smooth the top with a spatula.
  6. Bake for 15-20 minutes, or until the dip is hot and bubbly around the edges and the center is no longer jiggly. The top should have a slight golden crust.
  7. Let the dip rest for 5 minutes before serving. Serve warm with celery sticks, carrot chips, tortilla chips, or crusty bread.

Notes

For a lighter version, use Neufchâtel cheese. To make it spicier, use extra-hot buffalo sauce or add cayenne pepper. For a milder version, use mild buffalo sauce and extra cream cheese. The dip can be made ahead and refrigerated for up to 24 hours before baking. Leftovers keep in the refrigerator for up to 4 days. Reheat in the oven at 350°F for 10-15 minutes or in the microwave.
