  • 1/2 cup sour cream
  • 1/2 cup buffalo hot sauce (preferably Frank’s RedHot Original)
  • 2 cups cooked chicken, shredded or finely chopped
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese (optional)
  • Salt and black pepper to taste
  • 1/4 cup buttermilk
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon fresh lemon juice (about 1 squeeze)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make the ranch drizzle first: In a small bowl, whisk together buttermilk, mayonnaise, sour cream, garlic powder, onion powder, dried dill, dried parsley, salt, pepper, and lemon juice until smooth. Cover and refrigerate.
  3. In a large mixing bowl, combine softened cream cheese and sour cream. Blend until smooth and creamy.
  4. Add buffalo hot sauce and stir until the mixture is uniform in color.
  5. Fold in shredded chicken until evenly coated.
  6. Add shredded cheddar and mozzarella (reserve 1/4 cup cheddar for topping). Fold until evenly distributed. If using blue cheese, add it now.
  7. Season with a pinch of salt and pepper.
  8. Transfer mixture to an 8×8 or 9×9 baking dish and spread into an even layer.
  9. Sprinkle reserved cheddar cheese on top.
  10. Bake for 20-25 minutes, until edges are bubbling and top is golden brown.
  11. Let cool for 5 minutes.
  12. Drizzle ranch over the top in a zigzag pattern.
  13. Garnish with fresh chives or green onions if desired.
  14. Serve immediately with chips, crackers, or veggie sticks.

Notes

For best results, use full-fat cream cheese and sour cream. Shred your own cheese for smoother melting. Let the dip rest 5 minutes after baking to set. The ranch drizzle can be made ahead and stored in the fridge for up to a week. To make ahead, assemble the dip (without ranch) and refrigerate; add 5-10 minutes to baking time if baking from cold.
