This creamy butternut squash soup with brown butter is the kind of recipe that feels special without requiring a ton of effort. Roasted squash brings natural sweetness, while brown butter adds depth and warmth, all coming together in under an hour.

Ingredients

Scale
  • 1 medium butternut squash (about 2 pounds), peeled, seeded, and cut into 1-inch cubes
  • 4 tablespoons unsalted butter, divided
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon pure maple syrup (optional)
  • Salt and black pepper to taste
  • 2 sprigs fresh thyme (or 1/2 teaspoon dried)
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, salt, and pepper. Spread in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and caramelized.
  2. While squash roasts, melt 2 tablespoons butter in a large pot over medium heat. Add diced onion and cook 5-7 minutes until soft and translucent. Add minced garlic and cook 1 minute until fragrant.
  3. Add roasted squash, vegetable broth, and fresh thyme sprigs to the pot. Bring to a gentle boil, then reduce heat to low and simmer 10 minutes.
  4. Remove thyme sprigs. Use an immersion blender to blend soup until smooth, or carefully transfer to a blender in batches. Blend until velvety.
  5. In the same pot, melt remaining 2 tablespoons butter over medium heat. Swirl occasionally as butter foams and sizzles. After 2-3 minutes, when foam subsides and golden-brown specks appear, remove from heat immediately.
  6. Stir brown butter into blended soup along with maple syrup and heavy cream. Season with salt and pepper to taste.
  7. Serve hot, garnished with extra brown butter, toasted pepitas, and fresh thyme leaves if desired.

Notes

For the smoothest texture, blend the soup while it’s still warm. If soup is too thick, thin with extra broth or water. If too thin, simmer uncovered to reduce. Brown butter can go from perfect to burnt in seconds, so watch carefully and remove from heat as soon as it turns amber.
