This creamy, tangy Buffalo Chicken Dip is made in the slow cooker with blue cheese, cream cheese, and shredded chicken. It’s the perfect game day appetizer that converts even the biggest blue cheese skeptics.

Ingredients

Scale
  • 2 (8 oz) blocks cream cheese, softened
  • 1 cup crumbled blue cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 cups cooked, shredded chicken
  • 1/2 cup Buffalo wing sauce
  • 1/4 cup ranch dressing
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional: 1-2 tablespoons milk or heavy cream

Instructions

  1. Prep your chicken: If using a rotisserie chicken, remove the skin and shred the meat into bite-sized pieces. You want about 2 cups total. Set aside.
  2. Soften the cream cheese: Take cream cheese blocks out of the fridge about 30 minutes before starting. If forgotten, unwrap and microwave on low power for about 20 seconds. Cut into cubes.
  3. Combine the cheeses: In a medium mixing bowl, toss together shredded cheddar, Monterey Jack, and crumbled blue cheese.
  4. Layer in the Crockpot: Spray slow cooker insert with non-stick spray. Place cubed cream cheese in the bottom. Add shredded chicken on top. Pour Buffalo wing sauce and ranch dressing over everything. Sprinkle garlic powder and onion powder. Add pat of butter in the center. Dump mixed cheeses on top. Do not stir yet.
  5. Cook on low: Cover and cook on LOW for 2 hours. Do not lift the lid for the first 90 minutes.
  6. Stir and finish: After 2 hours, stir well. If too thick, stir in 1-2 tablespoons milk or heavy cream. Let cook uncovered for another 15-20 minutes to thicken if needed.
  7. Taste and adjust: Add more Buffalo sauce for heat or a pinch of salt if needed.
  8. Serve warm: Switch Crockpot to ‘Warm’ setting and serve directly from the pot. Garnish with extra blue cheese crumbles, chopped green onions, or a drizzle of ranch.

Notes

Don’t cook on High as it can make the dairy separate. Shred your own cheese for smoother melting. Watch the salt as cheeses and wing sauce are already salty. Keep warm on ‘Warm’ setting for up to 3 hours. Make ahead by assembling in the Crockpot insert the night before and refrigerating; add 30 minutes to cooking time. Full-fat cream cheese is essential for best texture.
