  • 1 cup wild rice blend
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prep the vegetables: dice the onion, carrots, and celery into small, even pieces. Mince the garlic.
  2. Layer the ingredients: place the diced vegetables, minced garlic, and chicken thighs in the bottom of the slow cooker. Sprinkle the wild rice blend over the top. Do not stir yet.
  3. Add the broth and seasonings: pour the chicken broth over everything. Add the dried thyme, dried rosemary, bay leaves, and a generous pinch of salt and pepper. Give it a gentle stir to combine.
  4. Cook on low for 6-7 hours, or on high for 3-4 hours, until the rice is tender and the chicken shreds easily with a fork.
  5. Remove the chicken: using tongs, carefully lift the chicken thighs out of the slow cooker and place them on a cutting board. Let them cool for a minute or two.
  6. Shred the chicken: using two forks, shred the chicken into bite-sized pieces. Discard any large chunks of fat.
  7. Add the cream: stir the heavy cream into the soup. Taste and adjust seasoning with more salt and pepper if needed.
  8. Return the chicken to the pot: add the shredded chicken back into the soup and stir gently. Let it heat through for another 5-10 minutes on low.
  9. Remove the bay leaves: fish them out with a spoon before serving.
  10. Serve and garnish: ladle the soup into bowls and top with fresh parsley. Serve hot with crusty bread or a simple side salad.

Notes

Add cream at the end to prevent curdling. If soup is too thick, stir in extra broth or water. Leftovers may need a splash of broth when reheating. For dairy-free, use full-fat coconut milk instead of heavy cream.
