  • 2 lbs boneless, skinless chicken breasts or thighs
  • 2 cans (15 oz each) white beans (Cannellini or Great Northern), drained and rinsed
  • 8 oz full-fat cream cheese
  • 1 cup frozen or canned corn (150g)
  • 1 can (4 oz) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tsp oregano
  • Salt to taste (about 1 tsp)
  • ½ tsp freshly ground black pepper
  • 1 tbsp olive oil (optional, for sautéing onions and garlic)

Instructions

  1. Dice the onion finely and mince garlic cloves. Drain and rinse the white beans and corn if using canned.
  2. Optional: Heat 1 tablespoon olive oil in a skillet over medium heat. Add diced onion and cook about 5 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.
  3. Place chicken breasts or thighs flat in the bottom of the slow cooker.
  4. Add drained white beans, corn, and diced green chiles evenly over the chicken.
  5. Sprinkle ground cumin, oregano, salt, and black pepper over the ingredients. Pour in 4 cups low-sodium chicken broth.
  6. Add sautéed onions and garlic mixture on top of everything.
  7. Cover and cook on low for 5 to 6 hours until chicken is tender. Alternatively, cook on high for 3 to 4 hours.
  8. Remove chicken and shred with two forks. Return shredded chicken to the crockpot and stir well.
  9. Cut cream cheese into cubes and stir into the chili. Let it melt, stirring gently until smooth and creamy (about 5 minutes).
  10. Taste and adjust seasoning with salt, pepper, or cumin as needed. Add a splash of broth or water if chili is too thick.
  11. Serve warm with desired toppings such as chopped cilantro, shredded cheese, or a squeeze of lime.

Notes

Avoid stirring vigorously after adding cream cheese to prevent curdling. Use thighs for juicier chicken. Sauté onions and garlic for deeper flavor. If cream cheese doesn’t melt fully, turn crockpot to warm and stir occasionally. Thin chili with broth rather than water to maintain flavor.
