  • 8 slices soft white sandwich bread or whole grain, crusts removed and cut into small rounds or squares (about 1.5 inches across)
  • Fresh chives, finely chopped (optional garnish)

Instructions

  1. Wash and dry the cucumber thoroughly. Using a mandoline or sharp knife, slice the cucumber into thin rounds about 1/8 inch (3 mm) thick. Lay slices on a paper towel-lined plate and sprinkle lightly with salt. Let them sit for 5-10 minutes to draw out excess moisture, then pat dry again to prevent sogginess.
  2. In a mixing bowl, combine 8 ounces of softened cream cheese with 2 tablespoons of chopped fresh dill, 1 teaspoon of lemon zest, a pinch of garlic powder, and salt and pepper to taste. Mix with a spoon or spatula until smooth and well combined. Taste and adjust seasoning if necessary.
  3. Remove crusts from 8 slices of sandwich bread. Using a small cookie cutter or knife, cut the bread into bite-sized rounds or squares approximately 1.5 inches (4 cm) across. Lightly toast the bread pieces if desired.
  4. Spread about 1 teaspoon of the creamy dill mixture on one piece of bread. Top with a cucumber slice. Then place another bread piece on top, pressing gently to create a neat little sandwich. Repeat for all pieces.
  5. Optionally, sprinkle finely chopped fresh chives or a tiny dill sprig on top of each bite for extra color and flavor. Serve immediately or refrigerate for up to 2 hours before serving.

Salting and drying cucumber slices prevents soggy bread. Use softened cream cheese for easy spreading. Assemble sandwiches just before serving for best texture. Variations include vegan cream cheese, adding jalapeño for heat, or swapping herbs.
