  • 6 large eggs, room temperature
  • ⅓ cup (80 ml) heavy cream
  • 4 slices bacon, cooked and chopped
  • ½ cup (50 g) shredded Gruyère cheese
  • 2 tablespoons fresh chives, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Butter or non-stick spray for greasing the muffin tin

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Cook the bacon in a frying pan over medium heat until crispy, about 6-8 minutes. Drain on paper towels and chop into small pieces.
  3. Grease your muffin tin with butter or non-stick spray.
  4. In a medium bowl, whisk together the eggs and heavy cream until fully combined and slightly frothy.
  5. Stir in salt and black pepper.
  6. Fold in the shredded Gruyère cheese, chopped bacon, and fresh chives.
  7. Pour the mixture evenly into the muffin cups, filling each about ¾ full.
  8. Bake for 20-25 minutes until edges are set and centers are slightly jiggly.
  9. Let the egg bites rest for 5 minutes before removing from the tin. Use a butter knife around the edges if needed to loosen.
  10. Serve warm or refrigerate for up to 4 days. Reheat gently in microwave or oven.

Notes

Use room temperature eggs for even cooking and fluffiness. Avoid overbaking to keep the egg bites creamy and tender. Save bacon fat for cooking other dishes. For dairy-free, substitute heavy cream with coconut cream and omit cheese or use vegan cheese.
