Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 4 ounces cream cheese, softened to room temperature
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 3 cups cooked, shredded chicken (about 2 large breasts or meat from one rotisserie chicken)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh basil or parsley, chopped (for garnish)
  • Extra Parmesan for serving

Instructions

  1. Melt the 2 tablespoons of butter in a Dutch oven over medium heat. Add the diced onion and cook for 4-5 minutes, until soft and translucent. Add the minced garlic and cook for another 30 seconds, until fragrant.
  2. Add the chopped sun-dried tomatoes and stir for about 1 minute to wake up their flavor.
  3. Pour in the 4 cups of chicken broth and 1 cup of water. Scrape up any browned bits from the bottom of the pot. Bring to a gentle boil, then reduce heat to low and simmer for 5 minutes.
  4. In a small bowl, whisk the softened cream cheese with a ladleful of hot broth until smooth (tempering). Pour the mixture back into the pot and stir well. Add the heavy cream and grated Parmesan, stirring until melted and combined.
  5. Stir in the shredded chicken, dried oregano, red pepper flakes (if using), salt, and pepper. Let simmer on low for 5-7 minutes, until chicken is heated through. Taste and adjust seasoning.
  6. If soup is too thick, add a splash more broth or water. If too thin, simmer uncovered for a few more minutes to reduce. The soup should coat the back of a spoon.
  7. Ladle into bowls and garnish with fresh basil or parsley and extra Parmesan. Serve immediately.

Notes

Temper cream cheese with warm broth before adding to prevent lumps. Keep heat low after adding dairy to prevent separation. For make-ahead, prepare through step 5 and reheat gently before serving. Do not freeze as dairy may separate. Use rotisserie chicken for convenience and extra flavor.
