  • 1 cup (240ml) unsweetened almond milk (or any milk of choice)
  • 3 tablespoons (60ml) maple syrup (real maple syrup preferred)
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract (pure vanilla preferred)
  • Pinch of salt
  • Optional toppings: whipped cream, toasted pecans, extra maple syrup, cinnamon

Instructions

  1. In a mixing bowl, whisk together 1 cup pumpkin puree, 1 cup unsweetened almond milk, and 3 tablespoons maple syrup until completely smooth, about 30 seconds.
  2. Add 1 teaspoon pumpkin pie spice, 1 teaspoon vanilla extract, and a pinch of salt. Whisk again until evenly distributed. Taste and adjust sweetness if needed.
  3. Sprinkle 3 tablespoons chia seeds over the surface while whisking continuously. Whisk for a full minute to prevent clumps.
  4. Let the mixture rest for 5 minutes, then whisk again vigorously to break up any clumps.
  5. Pour the mixture into jars or serving dishes, leaving about half an inch of headspace for toppings.
  6. Refrigerate for at least 4 hours, preferably overnight, until thickened and creamy.
  7. Stir before serving, then add desired toppings.

Notes

Let milk and pumpkin come to room temperature before mixing for smoother texture. Whisk chia seeds immediately and again after 5 minutes to prevent clumps. Refrigerate at least 4 hours; overnight is best. Do not freeze. For a warm version, heat gently on stovetop with a splash of milk.
