  • 4 cups low-sodium chicken broth
  • 1 cup whole milk
  • 5 ounces Boursin cheese, garlic & herb flavor
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. Heat 1 tablespoon butter in a large deep skillet over medium-high heat. Add shrimp and cook until pink and opaque, about 2 minutes per side. Remove shrimp and set aside.
  3. In the same skillet, add olive oil and minced garlic. Sauté for about 30 seconds until fragrant but not browned.
  4. Pour in chicken broth and milk, stirring to combine. Bring to a gentle boil, then add dried pasta, ensuring it is submerged.
  5. Reduce heat to medium-low and simmer uncovered, stirring occasionally, for 10-12 minutes or until pasta is al dente. Add more broth or water if mixture thickens too much.
  6. Add Boursin cheese to the skillet and stir gently until melted and sauce is creamy and smooth. Season with salt and pepper to taste.
  7. Return cooked shrimp to the skillet. Stir in remaining 2 tablespoons butter, lemon juice, and red pepper flakes if using. Warm through for 2 minutes.
  8. Sprinkle chopped fresh parsley over the top and serve hot directly from the pan.

Notes

Do not overcook shrimp to avoid rubbery texture. Stir pasta frequently to prevent sticking. If sauce thickens too much, add more broth or milk to loosen. Use low heat when melting Boursin cheese to avoid grainy sauce. Leftovers keep well refrigerated for up to 2 days; reheat gently on stove with added liquid.
