Instructions

  1. Toast the pecans: Place ¼ cup pecans in a dry skillet over medium heat. Stir frequently for about 3-5 minutes until fragrant and lightly browned. Remove promptly to avoid burning. Let cool.
  2. Mash the banana: In a mixing bowl, mash 1 large ripe banana with a fork until smooth but still a few lumps remain for texture.
  3. Combine wet ingredients: Add 1 cup milk, ½ cup Greek yogurt, 2 tablespoons brown sugar, 1 teaspoon vanilla extract, ½ teaspoon cinnamon, and a pinch of salt to the mashed banana. Stir well to combine. If you want a sweeter touch, stir in 1 tablespoon maple syrup or honey here.
  4. Add oats: Stir in 1 cup rolled oats until everything is evenly mixed. The mixture will look loose, but it thickens overnight as the oats absorb the liquid.
  5. Portion and chill: Divide the mixture into mason jars or airtight containers. Top each with toasted pecans—reserve a few for garnish in the morning.
  6. Refrigerate overnight: Seal containers and place in the fridge for at least 6 hours, ideally overnight.
