These creamy peanut butter banana overnight oats are a game-changer for busy mornings. Ready in just 5 minutes of prep, they’re thick, pudding-like, and packed with protein and flavor.

Ingredients

Scale
  • 1/2 cup rolled oats (old-fashioned)
  • 1/2 cup milk (any kind; whole milk recommended)
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons creamy peanut butter (natural preferred)
  • 1 ripe banana (with brown spots)
  • 1 tablespoon maple syrup or honey (optional, adjust to taste)
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a small bowl, mash the ripe banana with a fork until almost liquid and smooth.
  2. Add the milk and Greek yogurt to the mashed banana. Stir until fully incorporated and the mixture is pale and creamy.
  3. Add the peanut butter and stir vigorously until mostly combined, breaking up any large clumps.
  4. Stir in the maple syrup (or honey) and vanilla extract. Taste and adjust sweetness if needed.
  5. Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir until everything is evenly combined and the oats are submerged.
  6. Pour the mixture into a mason jar or airtight container, leaving about an inch of space at the top.
  7. Top with banana slices, a drizzle of extra peanut butter, and a sprinkle of cinnamon if desired. Seal the jar tightly.
  8. Refrigerate for at least 6 hours or overnight. In the morning, stir well and enjoy cold or microwave for 30-45 seconds if you prefer warm oats.

Notes

For best texture, use rolled oats (not quick or steel-cut). Mash the banana thoroughly for even sweetness. The oats keep in the fridge for up to 5 days. Add toppings just before serving to keep banana slices fresh. For a warm version, microwave for 60-90 seconds.
