Ingredients

Scale
  • 1 ½ cups graham cracker crumbs (about 10 full sheets, finely crushed)
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces (450g) cream cheese, softened
  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand.
  3. Press the crust mixture firmly into the bottom of a 9×9-inch baking pan. Bake for 8-10 minutes until slightly golden and fragrant. Let it cool.
  4. In a large bowl, beat softened cream cheese with sugar until smooth and creamy, about 2-3 minutes.
  5. Add eggs one at a time, mixing well after each addition without overbeating.
  6. Mix in pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, and salt until just combined.
  7. Fold in chocolate chips gently with a spatula.
  8. Pour the filling over the cooled crust and spread evenly.
  9. Bake for 45-50 minutes until edges are set with a slight jiggle in the center.
  10. Cool at room temperature for about an hour, then refrigerate for at least 4 hours or overnight.
  11. Cut into bars using a sharp knife, wiping the knife between slices with a warm, damp cloth.

Notes

Use room temperature cream cheese and eggs to avoid lumps. Avoid overmixing to prevent cracks. Baking at 325°F helps prevent cracking. Cooling gradually and refrigerating overnight improves texture and flavor. For gluten-free, substitute crust with almond flour or gluten-free crumbs. For vegan, use dairy-free cream cheese, vegan butter, and flax eggs.
