  • 1 tablespoon olive oil
  • 1 pound (450g) mild or spicy Italian sausage, casings removed
  • 3 cloves garlic, minced
  • 1 cup (240ml) pumpkin puree (not pumpkin pie filling)
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (120ml) chicken or vegetable broth, low-sodium
  • 1/4 cup (25g) grated Parmesan cheese, plus more for serving
  • 1 teaspoon dried sage (or 1 tablespoon fresh sage, chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 teaspoon nutmeg
  • Fresh parsley or sage leaves for garnish (optional)
  • Red pepper flakes for garnish (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the Italian sausage (casings removed) and break it up with a wooden spoon. Cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Transfer sausage to a plate with a slotted spoon, leaving the rendered fat in the pan.
  2. In the same skillet, add the gnocchi in a single layer. Cook undisturbed for 2-3 minutes until bottoms are golden and crispy. Stir and cook for another 2-3 minutes until crispy on all sides. Remove gnocchi and set aside with the sausage.
  3. Reduce heat to medium and add minced garlic to the skillet. Stir constantly for about 30 seconds until fragrant.
  4. Pour in the chicken or vegetable broth and scrape up any browned bits from the bottom of the pan. Let simmer for about 1 minute. Stir in pumpkin puree, heavy cream, dried sage, salt, black pepper, and nutmeg. Whisk until smooth. Bring to a gentle simmer and cook for 3-4 minutes, stirring occasionally, until sauce thickens slightly.
  5. Return the cooked sausage and crispy gnocchi to the skillet. Gently stir to coat everything evenly. Let simmer together for 2-3 minutes so flavors meld. If sauce is too thick, add a splash of broth or pasta water.
  6. Sprinkle grated Parmesan cheese over the top and stir gently until melted. Taste and adjust seasoning if needed.
  7. Serve immediately in bowls. Garnish with fresh parsley or sage leaves, additional Parmesan, and red pepper flakes if desired.

Notes

For a dairy-free version, substitute heavy cream with full-fat coconut milk and use dairy-free Parmesan. For gluten-free, use gluten-free gnocchi. To save time, you can boil gnocchi according to package directions instead of crisping them, but the texture will be less crispy. Leftovers can be refrigerated for up to 3 days; reheat gently with a splash of broth.
