Instructions

  1. Prepare the Pumpkin Spice Cold Brew Base: In a large mixing bowl, whisk together cold brew coffee, pumpkin puree, pumpkin spice mix, milk or cream, and granulated sugar until smooth and sugar dissolves (about 2-3 minutes). Taste and adjust pumpkin spice or sugar if desired.
  2. Chill the Mixture: Place the pumpkin spice cold brew base in the fridge for at least 10 minutes to chill and meld flavors.
  3. Make the Salted Caramel Whip: Using a chilled bowl and electric mixer, whip cold heavy cream at medium-high speed until soft peaks form (about 2 minutes). Add salted caramel sauce and vanilla extract, then continue whipping until stiff peaks form (1-2 minutes). Fold in a pinch of sea salt at the end.
  4. Assemble the Float: Pour the chilled pumpkin spice cold brew into a glass, leaving room at the top. Spoon the salted caramel whip generously on top, creating a fluffy mountain. Sprinkle lightly with sea salt.
