  • 1 cup fresh basil leaves, roughly chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 cups vegetable or chicken broth (low sodium)
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 4 cups cubed day-old crusty bread (like sourdough or French bread)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Arrange halved tomatoes cut side up on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with salt. Roast for 30-35 minutes until soft, caramelized, and slightly charred.
  2. While tomatoes roast, heat 1 tablespoon olive oil in a large Dutch oven over medium heat. Add diced onions and cook until translucent, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add roasted tomatoes with juices to the pot. Pour in 3 cups broth and stir. Simmer over medium-low heat for 10 minutes.
  4. Stir in chopped basil leaves and simmer for 2-3 minutes.
  5. Remove pot from heat and puree soup with an immersion blender until silky smooth. Alternatively, blend in batches in a regular blender carefully.
  6. Return pureed soup to low heat. Stir in heavy cream and season with salt and pepper. Warm through without boiling.
  7. For croutons, melt butter in a medium skillet over medium heat. Cook until golden brown and nutty, about 3-5 minutes. Add bread cubes and toss to coat. Cook 5-7 minutes until crisp and golden, stirring frequently.
  8. Ladle soup into bowls and top with brown butter croutons. Garnish with fresh basil leaves or a drizzle of cream if desired.

Notes

If soup is too thick after blending, add a splash more broth to loosen. Watch butter closely when browning to avoid burning. Use day-old bread for croutons to ensure crispiness. For dairy-free version, substitute heavy cream with coconut cream and butter with olive oil.
