  • 12 oz smoked sausage (kielbasa or andouille), sliced into ¼-inch rounds
  • 4 medium Yukon Gold or red potatoes, diced into ½-inch cubes
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • ¾ cup (75 g) sharp cheddar cheese, shredded
  • 2 tablespoons olive oil or butter
  • Salt and freshly ground black pepper, to taste
  • A handful fresh parsley, chopped (for garnish)
  • Optional: pinch of smoked paprika or red pepper flakes

Instructions

  1. Wash and dice the potatoes into roughly ½-inch cubes. Chop the onion finely and mince the garlic. Slice the smoked sausage into ¼-inch rounds.
  2. Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Add the diced potatoes in one layer and cook undisturbed for 5 minutes to get a golden crust. Stir occasionally until tender and browned, about 10-15 minutes. If potatoes stick, add a splash of water and cover briefly to steam.
  3. Push the potatoes to one side of the pan. Add the remaining oil or butter, then add the sliced sausage and onions. Cook, stirring occasionally, until sausage edges are crisp and onions are translucent, about 5 minutes. Add minced garlic in the last 30 seconds to avoid burning.
  4. Reduce heat to low. Pour in the heavy cream and stir to combine. Sprinkle shredded cheddar cheese over the top and stir gently until melted and sauce thickens slightly. If sauce is too thick, add a splash more cream or milk.
  5. Season with salt, pepper, and optional smoked paprika or red pepper flakes. Stir in chopped parsley just before serving.

Notes

Do not overcrowd the pan to ensure potatoes brown properly. Use moderate heat when adding cream and cheese to prevent curdling. Fresh parsley adds a fresh flavor and color. For a lighter version, substitute heavy cream with half-and-half or milk. Check sausage brand for gluten-free status. Cast iron skillet can be used for better sear but requires proper seasoning.
