  • 9 oz (250 g) cheese tortellini (fresh or frozen)
  • 4 cups (120 g) fresh baby spinach
  • 2 tbsp (28 g) unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups (32 fl oz / 950 ml) vegetable or chicken broth
  • 1 cup (8 fl oz / 240 ml) half-and-half or heavy cream
  • 1/2 cup (50 g) grated Parmesan cheese
  • Salt, to taste
  • Black pepper, freshly cracked, to taste
  • Red pepper flakes (optional, a pinch)

Instructions

  1. Melt 2 tablespoons of unsalted butter in a large soup pot over medium heat. Add the finely chopped onion and cook until soft and translucent, about 3–4 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
  2. Pour in 4 cups of vegetable or chicken broth and bring to a gentle simmer. Add 3 cups of fresh baby spinach and let it wilt for about 2 minutes.
  3. Optional: Using an immersion blender, puree half the soup in the pot until smooth to create a creamy texture. If no blender is available, finely chop the spinach and stir it in.
  4. Bring the soup back to a simmer and add the cheese tortellini. Cook according to package instructions, about 5–7 minutes, until tortellini float and are tender. Stir occasionally to prevent sticking.
  5. Lower heat to medium-low. Stir in 1 cup of half-and-half or heavy cream and 1/2 cup grated Parmesan cheese. Cook gently for 2–3 minutes until warmed through. Season with salt, black pepper, and optional red pepper flakes.
  6. Taste and adjust seasoning as needed. Serve hot, garnished with extra Parmesan or a drizzle of olive oil if desired.

Notes

Do not overcook the tortellini to avoid mushy texture. Blend part of the spinach for a silky broth without extra cream. Stir gently after adding cream to prevent curdling. Use low-sodium broth to control salt levels. Fresh ingredients improve flavor and texture. For dairy-free or gluten-free versions, substitute accordingly.
