  • For the Graham Cracker Crumble:
  • 1/2 cup graham crackers, crushed (60g)
  • 2 tbsp butter, melted (28g)
  • 1 tbsp brown sugar (12g)
  • 1/4 tsp cinnamon (optional, 1.25 ml)

Instructions

  1. Prepare the Graham Cracker Crumble: Preheat oven to 350°F (175°C). Mix crushed graham crackers, melted butter, brown sugar, and cinnamon until combined. Spread on parchment-lined baking sheet and bake 8-10 minutes until golden and fragrant. Let cool completely.
  2. Mix the Wet Ingredients: In a medium bowl, whisk softened cream cheese and milk until smooth. Add Greek yogurt, honey, vanilla extract, and lemon juice; whisk until fully incorporated.
  3. Combine with Oats: Fold in rolled oats and chopped strawberries gently, mixing evenly without over-stirring.
  4. Portion into Jars: Divide mixture evenly into two 16 oz (475 ml) mason jars or containers, leaving room at the top for crumble.
  5. Refrigerate Overnight: Seal jars and refrigerate at least 6 hours or overnight to soften oats and meld flavors.
  6. Serve with Crumble: Before serving, sprinkle a generous layer of cooled graham cracker crumble on top. Optionally add extra fresh strawberries or a drizzle of honey.
