  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 3 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1/4 cup (85g) honey
  • 2 tablespoons soy sauce (low sodium recommended)
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups (about 300g) broccoli florets

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss broccoli florets with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet and set aside.
  3. Pat dry chicken thighs with paper towels and season generously with salt and pepper on both sides.
  4. Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat. Add chicken thighs skin-side down and sear without moving for 7–8 minutes until skin is deep golden and crisp.
  5. Flip the thighs and cook the other side for 3 minutes. Remove from heat.
  6. In a small bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, and red pepper flakes (if using).
  7. Pour the sauce evenly over the chicken thighs in the skillet.
  8. Transfer the skillet and baking sheet with broccoli to the oven. Roast for 15–20 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and broccoli is tender with browned edges.
  9. Rest the chicken for 5 minutes after removing from the oven to let juices redistribute.
  10. Serve chicken with roasted broccoli, spooning extra honey garlic sauce from the skillet over the chicken.

Notes

Pat chicken skin dry before cooking to ensure crispiness. Avoid overcrowding the pan to prevent steaming. If skin isn’t crispy enough after roasting, broil for 1-2 minutes while watching closely. Stir broccoli halfway through roasting for even browning. Sauce can be prepared a day ahead and brought to room temperature before use. Reheat leftovers in a skillet or toaster oven to maintain crisp skin; avoid microwaving.
