These crispy Parmesan zucchini fritters are a quick and easy snack or side dish featuring a golden crust and tender zucchini inside, served with a tangy lemon garlic yogurt dip.

  • 2 medium zucchinis, grated (about 2 cups)
  • ½ cup finely grated Parmesan cheese
  • ¼ cup all-purpose flour (30g)
  • 1 large egg, room temperature
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying
  • For the lemon garlic yogurt dip:
  • ½ cup Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 small clove garlic, finely minced
  • 1 tablespoon chopped fresh dill or parsley (optional)
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis using a box grater or food processor into a large bowl to get about 2 cups (about 300g) of grated zucchini.
  2. Sprinkle 1 teaspoon of salt over the zucchini and toss to combine. Let sit for 10 minutes to draw out water.
  3. Using a clean kitchen towel or cheesecloth, squeeze out as much liquid as possible from the zucchini.
  4. In a medium bowl, combine the drained zucchini, ½ cup freshly grated Parmesan, ¼ cup all-purpose flour, 1 large egg, and 2 minced garlic cloves. Season with ½ teaspoon black pepper and a pinch of salt. Mix gently until just combined.
  5. Heat a non-stick or cast iron skillet over medium heat and add about 2 tablespoons of olive oil. Heat until shimmering but not smoking, about 2 minutes.
  6. Scoop about 2 tablespoons of batter per fritter and place in the pan, flattening slightly with the back of a spoon. Cook in batches if needed.
  7. Fry each side for 3-4 minutes until golden brown and crisp.
  8. Transfer cooked fritters to a plate lined with paper towels to drain excess oil. Keep warm in a low oven (around 200°F / 95°C) if cooking multiple batches.
  9. While fritters cook, stir together ½ cup Greek yogurt, 1 tablespoon fresh lemon juice, 1 finely minced garlic clove, chopped fresh dill or parsley, and a pinch of salt and pepper in a small bowl. Adjust lemon or garlic to taste.
  10. Serve the fritters warm with the lemon garlic yogurt dip.

Notes

Pressing moisture out of the zucchini is critical to avoid soggy fritters. Use a cast iron skillet for even heat and a golden crust. Keep fritters warm in a low oven if cooking in batches. For a gluten-free version, substitute all-purpose flour with almond flour. Baking at 400°F for 20-25 minutes is a lighter alternative but less crispy.
