This crispy roasted delicata squash with Parmesan is a quick and easy side dish that’s perfect for any occasion. With simple ingredients and a broiler finish, it’s a crowd-pleaser that’s both nutritious and delicious.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 2 tablespoons olive oil, plus more for the pan
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ⅓ cup finely grated Parmesan cheese
  • Optional garnishes: fresh thyme leaves, chopped parsley, red pepper flakes, or a squeeze of lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C). Position one rack in the middle of the oven and another about 6 inches from the top for the broiler step. Line a large rimmed baking sheet with parchment paper and set aside.
  2. Wash the delicata squash thoroughly under running water and pat dry. Cut off both ends (about ¼ inch from each tip) and discard. Slice the squash in half lengthwise and scoop out the seeds and stringy pulp with a spoon.
  3. Place each half flat-side down on your cutting board and slice crosswise into ½-inch thick half-moons.
  4. In a medium mixing bowl, combine the squash slices with 2 tablespoons of olive oil, 1 teaspoon of kosher salt, ½ teaspoon of black pepper, and ½ teaspoon of garlic powder. Toss gently with your hands until every piece is evenly coated.
  5. Spread the seasoned squash slices in a single layer on the prepared baking sheet, making sure they are not overlapping.
  6. Roast for 15 minutes on the middle rack. Remove the sheet from the oven and carefully flip each piece using a metal spatula.
  7. Sprinkle the grated Parmesan evenly over the flipped squash slices. Return the baking sheet to the oven and roast for another 5-7 minutes, until the Parmesan is melted and starting to brown.
  8. Switch your oven to the broil setting (high heat). Move the baking sheet to the top rack, about 6 inches from the broiler. Broil for 1-2 minutes, watching closely, until the Parmesan is deep golden brown and crispy.
  9. Remove the baking sheet from the oven and let the squash rest for 2-3 minutes. If using, sprinkle with fresh herbs or red pepper flakes and a squeeze of lemon juice.
  10. Serve immediately.

Notes

For best results, use freshly grated Parmesan from a block. Do not skip the flipping step. Watch the broiler closely to prevent burning. The squash can be prepped up to 2 days in advance.
