These crispy smashed potatoes are tender on the inside with golden, crackly edges, paired perfectly with a quick and flavorful garlic herb aioli. A simple, crowd-pleasing side that’s quick to make and delicious.

  • 1.5 pounds small Yukon Gold or baby potatoes
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • ½ cup mayonnaise (120 ml)
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons fresh herbs (parsley and chives), finely chopped
  • Optional: ¼ teaspoon smoked paprika or chili flakes

Instructions

  1. Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over high heat. Cook for 15-20 minutes or until a fork slides in with slight resistance.
  2. Drain the potatoes well and let them sit in a colander for a few minutes to steam off excess moisture. Pat dry with paper towels.
  3. Preheat the oven to 425°F (220°C).
  4. Arrange the potatoes on a greased baking sheet. Using a potato masher or the bottom of a glass, gently press down on each potato until about ½-inch thick, keeping them in one piece with rough edges.
  5. Drizzle olive oil liberally over the smashed potatoes. Sprinkle with salt, pepper, and smoked paprika if using.
  6. Bake for 25-30 minutes, flipping halfway through, until edges are crispy and golden brown.
  7. While the potatoes roast, whisk together mayonnaise, minced garlic, lemon juice, and chopped herbs in a bowl. Season with salt and pepper to taste. Stir in chili flakes if desired.
  8. Serve the crispy smashed potatoes warm with a generous dollop of garlic herb aioli on the side.

Notes

Dry the potatoes thoroughly after boiling to ensure crispiness. Flip the potatoes halfway through roasting for even golden edges. For a cheesy finish, sprinkle Parmesan during the last 5 minutes of baking. The aioli can be made ahead and stored up to 3 days refrigerated; whisk before serving. Reheat potatoes in a hot oven or air fryer to maintain crispiness; avoid microwaving.
