Crowd-Pleasing Cranberry Orange Sauce with Rosemary

This isn’t your average cranberry sauce. It’s the one that gets talked about long after the turkey is gone. Tart, sweet, with flecks of orange zest and a whisper of rosemary, it’s incredibly simple to make and perfect for a crowd.

Ingredients

Scale
  • 12 oz (340 g) fresh or frozen cranberries
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (120 ml) fresh orange juice
  • 1 tablespoon orange zest
  • 1 sprig fresh rosemary, plus more for garnish
  • 1/2 cup (120 ml) water
  • Pinch of salt

Instructions

  1. Prep your ingredients: Zest the orange to get 1 tablespoon of zest, then juice it to get 1/2 cup. Rinse fresh cranberries and pick out any soft ones.
  2. In a medium saucepan, combine the sugar, orange juice, and water. Stir briefly.
  3. Add the cranberries, rosemary sprig, salt, and orange zest to the pot.
  4. Place the saucepan over medium-high heat and bring to a full rolling boil, stirring occasionally. You’ll hear the cranberries pop.
  5. Reduce the heat to medium-low and let it simmer gently for 10-12 minutes, stirring occasionally, until the sauce thickens and coats the back of a spoon.
  6. Turn off the heat and remove the rosemary sprig with tongs or a fork.
  7. Let the sauce cool in the pot for about 10 minutes. Serve warm, at room temperature, or cold. For make-ahead, cool completely and refrigerate in an airtight container.

Notes

This sauce gets better after a day or two in the fridge. For a smoother sauce, use a potato masher or immersion blender after cooking. If the sauce seems too thin after simmering, it will thicken as it cools. To make it less sweet, start with 3/4 cup sugar and add more to taste.
