Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 4 cups low-sodium chicken broth
  • 1 large yellow onion, diced
  • 3 carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup all-purpose flour
  • 1 cup frozen peas
  • 1 can refrigerated buttermilk biscuits (e.g., Pillsbury Grands)
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prep your vegetables: dice the onion, slice the carrots and celery, and mince the garlic.
  2. Layer everything in the crockpot: place the chicken pieces at the bottom, add the onion, carrots, celery, and garlic on top. Pour in the chicken broth, then add the thyme, rosemary, salt, pepper, and bay leaf. Stir gently.
  3. Cook low and slow: cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is tender and easily shreds.
  4. Shred the chicken: remove the chicken from the crockpot, shred with two forks, and return it to the pot. Remove the bay leaf.
  5. Make the creamy base: in a small bowl, whisk together the heavy cream, milk, and flour until smooth. Pour into the crockpot and stir well.
  6. Add the peas: stir in the frozen peas.
  7. Cook the biscuits: preheat oven to 375°F. Place biscuits on a baking sheet, brush with melted butter, and sprinkle with garlic powder. Bake according to package directions (about 10-12 minutes) until golden brown.
  8. Let the soup thicken: cover the crockpot and cook on LOW for another 15-20 minutes. Adjust thickness with more broth or milk if needed.
  9. Serve: ladle soup into bowls, top with a warm biscuit, and garnish with fresh parsley if desired.

Notes

For extra flavor, sear the chicken in a hot pan before adding to the crockpot. Taste and adjust seasoning about 30 minutes before serving. Keep biscuits separate until serving to maintain texture. For a thicker soup, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in; cook 10-15 minutes more.
