These deviled eggs are the ultimate appetizer for any gathering, featuring a creamy, tangy filling with smoky bacon and fresh chives. A secret splash of pickle juice adds brightness, making them unforgettable.

Ingredients

Scale
  • 12 large eggs, hard-boiled and peeled
  • 6 slices thick-cut bacon
  • 1/3 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon pickle juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons fresh chives, finely chopped
  • Optional garnish: extra paprika, whole chives

Instructions

  1. Boil the eggs: Place eggs in a large pot, cover with cold water by 1 inch, add a pinch of salt. Bring to a rolling boil, cover, turn off heat, and let sit for exactly 12 minutes.
  2. Shock the eggs: Transfer eggs to a bowl of ice water and let cool for at least 10 minutes.
  3. Cook the bacon: In a skillet over medium heat, cook bacon slices for 4-5 minutes per side until crispy. Drain on paper towels, then crumble. Reserve 1 tablespoon for garnish.
  4. Peel and halve the eggs: Tap eggs to crack shells, peel from the wider end, rinse, and pat dry. Slice each egg in half lengthwise and pop yolks into a bowl. Arrange whites on a platter.
  5. Make the filling: Add mayonnaise, mustard, pickle juice, salt, pepper, and paprika to the yolks. Mash until smooth and creamy. Fold in crumbled bacon (reserving garnish) and half the chives. Adjust seasoning to taste.
  6. Fill the eggs: Spoon filling into a piping bag or zip-top bag with a snipped corner. Pipe filling into each egg white half, dividing evenly.
  7. Garnish and serve: Sprinkle reserved bacon, remaining chives, and a dusting of paprika over the eggs. Serve immediately or refrigerate.

Notes

Use eggs at least a week old for easier peeling. Add baking soda to boiling water to help shells release. Don’t overmix the filling to avoid greasiness. Make filling and boil eggs a day ahead for convenience. Keep deviled eggs cold; serve on ice if at a party. Add bacon garnish just before serving to keep it crispy.
