Ingredients

Scale
  • 1 large wheel of brie (8–12 ounces)
  • 1 wedge of sharp cheddar (6–8 ounces)
  • 1 wedge of blue cheese (4–6 ounces)
  • 1 small log of goat cheese (4 ounces)
  • 4–6 ounces prosciutto, thinly sliced
  • 4–6 ounces salami (Genoa or soppressata), thinly sliced
  • 4 ounces capicola or speck (optional)
  • 1 cup dried figs or dates
  • 1 cup seedless red grapes
  • 1/2 cup dried apricots
  • 1/4 cup honey (preferably local)
  • 1/4 cup fig jam or onion jam
  • 1 cup spiced pecans or candied walnuts
  • 1 cup Marcona almonds
  • 1 cup assorted crackers (water crackers, buttery rounds, seeded crisps)
  • 1 baguette, sliced and toasted
  • Fresh rosemary sprigs for garnish
  • Fresh thyme sprigs for garnish
  • Edible flowers (optional, for garnish)

Instructions

  1. Start with the cheese: Place the brie, cheddar, blue cheese, and goat cheese on the board, spacing them evenly. Cut the cheddar into thin slices or small cubes and fan them out. Leave the blue cheese wedge whole with a small knife next to it. Place the goat cheese in a small bowl or directly on the board.
  2. Add the bowls: Place small bowls of jam, honey, and any other wet ingredients on the board, nestling them among the cheeses.
  3. Layer the meats: Fold or roll the prosciutto into loose ribbons and place near the brie. Fold salami slices in half twice to create triangles and arrange in small overlapping piles. Place meats opposite the cheeses for visual balance.
  4. Add the fruits and sweets: Scatter dried figs, apricots, and grapes around the board, filling gaps between cheese and meat piles. Leave grapes in small clusters. Tuck figs near the brie.
  5. Fill in with crunch: Arrange crackers in small overlapping fans or stacks near the cheeses they pair best with. Sprinkle spiced pecans and Marcona almonds in small piles around the board, filling any empty spaces.
  6. Garnish and finish: Drizzle honey over the brie in a zigzag pattern. Sprinkle fresh rosemary and thyme sprigs over the board. Add edible flowers sparingly if using. Step back and check for bare spots, adding more crackers or nuts as needed.
  7. Serve at room temperature: If made ahead, take the board out of the fridge 30-45 minutes before serving to let the cheese come to room temperature.

Notes

Prep everything before assembling: wash grapes, slice baguette, toast nuts. Warm honey for easier drizzling. Use the ‘Rule of Three’: three cheeses, three meats, three fruits, three crunchy elements. Place most popular items (brie, prosciutto) in center or front. For make-ahead, assemble up to 24 hours in advance, cover with plastic wrap, and refrigerate. Add honey drizzle just before serving. Leftover cheese keeps up to a week in the fridge; meats keep 3-4 days.
