  • 4 soft caramel candies (or 2 tablespoons homemade caramel sauce, chilled and thickened)

Instructions

  1. Preheat your oven to 425°F (220°C). Butter your ramekins thoroughly and dust with cocoa powder or flour, tapping out the excess.
  2. Melt butter and chocolate together in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth and glossy. Alternatively, use a double boiler. Set aside to cool slightly.
  3. In a separate bowl, whisk eggs, granulated sugar, and vanilla extract until pale and slightly thickened, about 2-3 minutes with a hand mixer.
  4. Slowly pour the melted chocolate mixture into the egg mixture, stirring gently to combine. Add a pinch of salt.
  5. Sift flour over the batter and fold in carefully using a spatula, avoiding overmixing.
  6. Spoon batter evenly into ramekins, filling each about halfway.
  7. Place two soft caramel candies (or 1 tablespoon thickened caramel sauce) in the center of each ramekin, pressing down gently but keeping covered by batter.
  8. Top with remaining batter, smoothing the surface gently.
  9. Bake on a baking sheet for 12-14 minutes until edges are set but center jiggles slightly when nudged.
  10. Let cakes rest 1-2 minutes, run a knife around edges to loosen, then invert onto plates.
  11. Sprinkle with flaky sea salt and powdered sugar if desired. Serve warm with fresh berries or vanilla ice cream.
