  • 2 cups all-purpose flour (240 g)
  • 1 ¾ cups granulated sugar (350 g)
  • ¾ cup unsweetened cocoa powder (75 g)
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs, room temperature
  • 1 cup whole milk (240 ml)
  • ½ cup vegetable oil (120 ml)
  • 2 tsp vanilla extract
  • 1 cup boiling water (240 ml)
  • 1 cup graham cracker crumbs (100 g)
  • 4 large egg whites, room temperature
  • 1 cup granulated sugar (200 g)
  • ¼ cup corn syrup (60 ml)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup mini marshmallows (about 50 g) (optional)
  • ¼ cup additional crushed graham crackers (25 g)
  • ½ cup chocolate chunks or chips (90 g) (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan or line with parchment paper.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, salt, and graham cracker crumbs. Whisk to combine.
  3. In another bowl, beat eggs with sugar until pale and slightly thickened. Add vegetable oil, milk, and vanilla extract; mix thoroughly.
  4. Slowly add dry ingredients to wet ingredients, stirring gently until just combined. Do not overmix.
  5. Carefully stir in boiling water to loosen the batter; it will be thin.
  6. Pour batter into prepared pan and smooth surface. Optionally sprinkle chocolate chunks and mini marshmallows on top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely on a wire rack.
  8. To make frosting, combine egg whites, sugar, corn syrup, and salt in a heatproof bowl over simmering water. Whisk constantly until sugar dissolves and mixture reaches 160°F (70°C).
  9. Transfer mixture to a stand mixer and whip on high until stiff, glossy peaks form and bowl is cool, about 7-10 minutes. Beat in vanilla extract.
  10. Spread frosting evenly over cooled cake.
  11. Toast frosting using a kitchen torch until golden brown or place under broiler for 1-2 minutes, watching closely.
  12. Sprinkle remaining crushed graham crackers over toasted frosting.
  13. Let cake set for 15-20 minutes before slicing.

Notes

Bloom the cocoa powder with boiling water for richer flavor. Do not overmix batter to avoid toughness. Use a clean, dry bowl and beaters for whipping egg whites. Toast frosting carefully to avoid burning. If no kitchen torch, use broiler and watch closely.
