Ingredients

Scale
  • 24–30 frozen fully cooked meatballs (about 1-inch diameter)
  • 1 can (16.3 oz) refrigerated breadstick dough
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 24–30 sliced black olives
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon Italian seasoning (optional)
  • Extra marinara sauce for dipping
  • Grated Parmesan cheese for serving
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. If meatballs are larger than 1-inch, cut them in half. Microwave for 1-2 minutes to take the chill off.
  3. Open the can of breadstick dough and separate into 8 strips. Cut each strip lengthwise into 3-4 thinner strips (about 1/2-inch wide).
  4. Place a meatball at one end of a dough strip and wrap the dough around it in a criss-cross pattern, leaving a small gap at the top for the face. Press the end to seal.
  5. Place wrapped meatballs on the prepared baking sheet, about 1 inch apart.
  6. Press two sliced black olives into the exposed gap at the top of each mummy for eyes.
  7. In a small bowl, mix olive oil, garlic powder, and Italian seasoning. Brush over the dough.
  8. Sprinkle a small pinch of shredded mozzarella over each mummy.
  9. Bake for 12-15 minutes until dough is golden brown and meatballs are heated through.
  10. While baking, warm extra marinara sauce in a small saucepan over low heat.
  11. Let cool for 2-3 minutes, then transfer to a serving platter. Sprinkle with Parmesan and parsley if desired. Serve with warm marinara sauce for dipping.

Notes

You can assemble the mummies up to 4 hours ahead and refrigerate. Add eyes and cheese just before baking. For gluten-free, use gluten-free meatballs and dough. For vegetarian, substitute with vegetarian meatballs or cheese-stuffed ravioli. Leftovers keep in the refrigerator for up to 3 days and can be reheated in a 350°F oven for 5-7 minutes.
