Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 can (15 ounces) fire-roasted diced tomatoes, undrained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 can (4 ounces) diced green chiles
  • 3 cups beef broth, low-sodium
  • 1 tablespoon tomato paste
  • Shredded cheddar cheese (for topping)
  • Sour cream or Greek yogurt (for topping)
  • Fresh cilantro, chopped (for topping)
  • Diced avocado (for topping)
  • Tortilla chips or strips (for topping)
  • Lime wedges (for topping)

Instructions

  1. Brown the ground beef in a large Dutch oven over medium-high heat, breaking it apart, until browned (5-6 minutes). Drain excess fat, leaving about 1 tablespoon.
  2. Add diced onion and cook for 2-3 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle chili powder, cumin, smoked paprika, oregano, salt, and pepper over the mixture. Stir constantly for 30 seconds to bloom the spices.
  4. Add tomato paste and cook for 1 minute, stirring frequently.
  5. Pour in fire-roasted diced tomatoes (with juices) and beef broth. Stir, scraping the bottom of the pot to release browned bits.
  6. Stir in drained black beans, drained kidney beans, frozen corn, and diced green chiles.
  7. Bring to a gentle boil, then reduce heat to medium-low. Simmer uncovered for 15 minutes, stirring occasionally.
  8. Taste and adjust seasoning as needed.
  9. Ladle into bowls and top with desired toppings: shredded cheddar, sour cream, cilantro, avocado, tortilla chips, and a squeeze of lime.

Notes

For best flavor, use fire-roasted tomatoes. Add a pinch of sugar if tomatoes taste too acidic. For a lighter version, substitute ground turkey or chicken. For vegetarian, skip meat and add extra beans or plant-based crumbles. Soup tastes even better the next day as flavors meld.
