  • 1 1/2 cups (135g) rolled oats
  • 1/2 cup (125g) peanut butter (creamy or crunchy)
  • 1/3 cup (113g) honey
  • 1 teaspoon (5ml) vanilla extract

Instructions

  1. In a mixing bowl, add 1 1/2 cups (135g) of rolled oats and stir to fluff and break any clumps.
  2. Add 1/2 cup (125g) peanut butter. If stiff, warm slightly in the microwave for 15 seconds to soften.
  3. Pour in 1/3 cup (113g) honey to bind and sweeten the mixture.
  4. Add 1 teaspoon (5ml) vanilla extract to round out the flavors.
  5. Mix thoroughly with a spoon or spatula until the mixture is sticky but manageable. Add a splash of milk if too dry.
  6. Scoop tablespoon-sized portions and roll between palms to form compact balls, making about 15-18 bites.
  7. Place the bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  8. Enjoy immediately or store in an airtight container in the fridge for up to one week.
