Transform fresh pumpkin seeds into a crispy, golden snack in under 20 minutes using your air fryer. This easy recipe is kid-approved, budget-friendly, and perfect for fall snacking.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (from any pumpkin variety)
  • 1 tablespoon olive oil or avocado oil
  • ½ teaspoon sea salt or kosher salt (plus more to taste)
  • Optional seasonings: garlic powder, smoked paprika, cinnamon sugar, chili lime, ranch seasoning (start with ½ teaspoon)

Instructions

  1. Scoop seeds from pumpkin and separate from stringy pulp. Rinse in a colander under cold water, rubbing gently to remove remaining bits.
  2. Spread rinsed seeds on a clean kitchen towel or paper towels. Pat dry and let air dry for 5-10 minutes. (For faster drying, spread on a baking sheet and place in a 200°F oven for 5 minutes.)
  3. In a medium mixing bowl, combine dried pumpkin seeds with 1 tablespoon oil and ½ teaspoon salt. Toss until evenly coated. Add any optional seasonings and toss again.
  4. Preheat air fryer to 350°F (175°C) for 2-3 minutes.
  5. Spread seasoned seeds in a single layer in the air fryer basket. Do not overcrowd. Cook at 350°F for 8-10 minutes, shaking the basket halfway through. Check at 8 minutes for doneness—seeds should be golden brown and fragrant.
  6. Remove basket and let seeds cool for 5 minutes. They will continue to crisp up. Taste and cook 1-2 minutes more if needed.
  7. Serve immediately or store in an airtight container at room temperature for up to 2 weeks.

Notes

For best results, dry seeds thoroughly before cooking to ensure crispiness. Shake basket halfway through for even cooking. Start checking at 8 minutes as air fryer temperatures vary. Seeds can be refreshed in the air fryer at 350°F for 2-3 minutes if they lose crunch. Store in an airtight container at room temperature for up to 2 weeks, or freeze for up to 3 months.
