Tender-crisp green beans wrapped in crispy bacon and coated with a buttery brown sugar glaze that caramelizes in the oven. This irresistible side dish turns even the most stubborn green bean skeptics into converts, perfect for holidays, potlucks, or any gathering.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 12 slices regular cut bacon
  • 1 tablespoon olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ⅓ cup packed brown sugar (light or dark)
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Pinch of flaky sea salt (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Position rack in center of oven.
  2. Line a rimmed baking sheet with parchment paper or aluminum foil. Place a wire rack on top if using.
  3. Rinse green beans and pat dry. Trim stem ends, keeping beans roughly the same length.
  4. In a large bowl, toss green beans with olive oil, salt, and pepper until evenly coated.
  5. Cut each bacon slice in half crosswise. Bundle 3-4 green beans together and wrap with one piece of bacon, slightly overlapping ends. Place seam-side down on prepared baking sheet or wire rack. Repeat to make about 12 bundles.
  6. In a small bowl, whisk together brown sugar, melted butter, minced garlic, soy sauce, and red pepper flakes (if using) until smooth.
  7. Brush or spoon glaze generously over each bacon-wrapped bundle, covering all surfaces. Reserve any leftover glaze.
  8. Bake for 20 minutes. If not using a wire rack, flip bundles halfway through (at 10 minutes).
  9. After 20 minutes, brush bundles with reserved glaze (if any).
  10. Return to oven and bake for 5-10 more minutes, until bacon is crispy and glaze is deep amber and caramelized. Watch closely to prevent burning.
  11. Remove from oven and let rest on pan for 5 minutes.
  12. Transfer to serving platter. Garnish with chopped parsley and flaky sea salt. Serve warm or at room temperature.

Notes

For best results, use fresh green beans (not frozen) and regular cut bacon. A wire rack helps bacon crisp on all sides. Watch the glaze closely in the last 5 minutes to prevent burning. Bundles can be assembled up to 24 hours ahead and refrigerated; add a few extra minutes to baking time if starting cold. Leftovers keep in the fridge for up to 3 days; reheat in oven or air fryer for best texture.
