These baked apple fritters are tender, golden, and coated in cinnamon sugar—no deep frying required. They come together in about 30 minutes with simple pantry ingredients and are perfect for breakfast, brunch, or dessert.

  • 1 large egg, room temperature
  • ¼ cup (60g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 large or 2 small apples (about 1 ½ cups diced), peeled, cored, and diced into ¼-inch cubes (Honeycrisp, Granny Smith, or Fuji recommended)
  • ½ cup (100g) granulated sugar (for coating)
  • 1 ½ tablespoons ground cinnamon (for coating)
  • 3 tablespoons (45g) unsalted butter, melted (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. Prepare the apple: Peel, core, and dice the apple into small ¼-inch cubes. Set aside.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, ⅓ cup sugar, baking powder, 1 teaspoon cinnamon, and salt until evenly combined.
  4. Mix the wet ingredients: In a small bowl or liquid measuring cup, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  5. Combine wet and dry: Pour the wet mixture into the dry mixture. Stir gently with a spatula or wooden spoon until just combined. A few streaks of flour are okay—do not overmix.
  6. Fold in the apples: Add the diced apple pieces and fold gently until evenly distributed.
  7. Portion the fritters: Using a 2-tablespoon cookie scoop or two spoons, drop rounded mounds of batter onto the prepared baking sheet, spacing them about 2 inches apart. You should get about 12 to 14 fritters.
  8. Bake the fritters: Place the baking sheet in the preheated oven and bake for 12 to 14 minutes, until the edges are golden brown, the tops are set, and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Prepare the cinnamon sugar coating: While the fritters bake, mix the ½ cup sugar and 1 ½ tablespoons cinnamon together in a shallow bowl. Melt the 3 tablespoons butter in a small dish.
  10. Coat the warm fritters: Let the fritters cool on the baking sheet for 2 minutes. Working one at a time, brush each warm fritter generously with melted butter, then roll it in the cinnamon sugar mixture until fully coated. Place on a wire rack to cool slightly.
  11. Serve warm. Best enjoyed fresh, but also delicious at room temperature.

Notes

Do not overmix the batter—stir just until combined. Use firm apples like Honeycrisp, Granny Smith, or Fuji. Coat the fritters while they are still warm for the best cinnamon sugar adherence. For gluten-free, use a 1:1 gluten-free baking flour blend. For dairy-free, use unsweetened almond or oat milk and plant-based butter.
