A cozy, budget-friendly turkey breast for two with a sweet-tart cranberry orange glaze. Perfect for small celebrations or a special dinner without the fuss or cost of a whole turkey.

Ingredients

Scale
  • 1 bone-in, skin-on turkey breast (about 2 to 2.5 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup fresh orange juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon orange zest
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven.
  2. Pat the turkey breast dry with paper towels.
  3. In a small bowl, mix together the kosher salt, black pepper, garlic powder, and dried thyme. Rub the olive oil all over the turkey breast, then sprinkle the seasoning mixture evenly over the entire surface. Let it sit at room temperature for about 20 minutes.
  4. In a small saucepan over medium heat, combine the cranberry sauce, fresh orange juice, honey, Dijon mustard, and orange zest. Whisk until smooth. Bring to a gentle simmer, then reduce heat to low and cook for about 5 minutes, stirring occasionally. Remove from heat and stir in the butter until melted and glossy. Set aside about 1/4 cup of the glaze for serving.
  5. Place the seasoned turkey breast on a wire rack set inside your roasting pan or baking dish. Roast uncovered for 30 minutes.
  6. After 30 minutes, remove the turkey from the oven. Generously coat the turkey with the cranberry orange glaze. Return to the oven and roast for another 15 minutes.
  7. Pull the turkey out and apply another layer of glaze. Roast for another 15 minutes.
  8. Insert a meat thermometer into the thickest part of the breast, avoiding the bone. Continue roasting until the internal temperature reaches 165°F (74°C), checking every 5 minutes if needed.
  9. Once the turkey reaches temperature, remove from the oven and tent loosely with aluminum foil. Let it rest for at least 10-15 minutes.
  10. Transfer the rested turkey to a cutting board. Slice against the grain into thick pieces. Drizzle with the reserved glaze and serve.

Notes

Start with a room-temperature turkey breast. Don’t apply glaze too early to prevent burning. Use a meat thermometer for accuracy. If skin browns too quickly, tent with foil. Make extra glaze for serving. Let turkey rest on a cutting board, not in the pan.
