This candy corn popcorn bark is a quick and easy fall treat that combines crunchy popcorn, creamy white chocolate, and chewy candy corn for an addictive sweet-and-salty snack. Perfect for Halloween parties, Thanksgiving dessert tables, or cozy nights in.

Ingredients

Scale
  • 8 cups popped popcorn (about 1/2 cup unpopped kernels, or one standard bag of plain microwave popcorn)
  • 1 1/2 cups candy corn
  • 12 ounces white chocolate chips
  • 1 tablespoon refined coconut oil
  • Flaky sea salt (optional)

Instructions

  1. Pop your popcorn using your preferred method. Spread the popped popcorn on a prepared baking sheet in a single layer. Pick out any unpopped kernels. Let the popcorn cool completely, about 5 minutes.
  2. Line a large baking sheet with parchment paper, extending up the sides slightly.
  3. Place white chocolate chips and coconut oil in a microwave-safe bowl. Microwave at 50% power for 30 seconds, then stir. Repeat in 20-second intervals, stirring between each, until the chocolate is smooth and fully melted (about 1.5 to 2 minutes total).
  4. Transfer the cooled popcorn to a large mixing bowl. Pour the melted white chocolate over the top. Use a silicone spatula to gently fold the popcorn and chocolate together until every kernel is coated.
  5. Sprinkle the candy corn over the chocolate-coated popcorn. Fold gently two or three times to distribute evenly.
  6. Pour the coated popcorn mixture onto the prepared baking sheet. Spread into an even layer, about 1/2 to 3/4 inch thick. Press down gently to compact slightly.
  7. If using, sprinkle a generous pinch of flaky sea salt over the top.
  8. Allow the bark to set at room temperature for about 1 hour, or until the chocolate is firm. Alternatively, refrigerate for 20 minutes.
  9. Once set, break the bark into irregular pieces using your hands or a sharp knife.

Notes

Let melted white chocolate cool for about 2 minutes before adding to popcorn to prevent candy corn from melting. Avoid butter-flavored popcorn. For best results, use fresh candy corn and refined coconut oil. Store in an airtight container at room temperature for up to 5 days. Freezes well for up to 3 months.
