This Easy Cheesy Ground Beef and Rice Skillet is a quick, one-pan dinner that comes together in under 30 minutes. With seasoned ground beef, tender rice, and melted cheddar cheese, it’s the ultimate comfort food for busy weeknights.

  • 1 pound (450g) ground beef (80/20 or 85/15)
  • 1 cup (200g) long-grain white rice, uncooked
  • 2 cups (480ml) low-sodium beef broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup (120g) shredded sharp cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned and no longer pink (5-7 minutes). Leave about a tablespoon of fat in the pan.
  2. Add the diced onion to the skillet and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle the smoked paprika, salt, and black pepper over the beef mixture. Add the Worcestershire sauce and stir. Cook for 1 minute.
  4. Pour in the uncooked rice and stir to coat. Then add the beef broth and stir, scraping up any browned bits from the bottom of the pan.
  5. Bring the mixture to a boil, then reduce heat to low. Cover the skillet with a lid and simmer for 18-20 minutes. Do not lift the lid during this time.
  6. After 18 minutes, remove the lid and check the rice. It should be tender and have absorbed most of the liquid. If still firm, add 2-3 tablespoons of water, cover, and cook for another 2-3 minutes.
  7. Sprinkle the shredded cheddar cheese evenly over the top. Cover the pan and let it sit off the heat for 2-3 minutes until the cheese is melted.
  8. Garnish with fresh parsley if desired. Serve straight from the skillet.

Notes

For best results, use long-grain white rice (not instant). Do not lift the lid while the rice is cooking to ensure proper steaming. If rice is undercooked after 20 minutes, the heat may have been too low; try medium-low next time. For a crusty bottom, let the skillet sit an extra minute before serving. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
