This easy classic meatloaf with brown sugar glaze is a comforting, crowd-pleasing dinner that started as a happy accident. Made with simple ingredients and a secret flaxseed trick, it’s tender, juicy, and topped with a sweet-savory caramelized glaze.

Ingredients

Scale
  • 2 pounds ground beef (80/20 blend)
  • 1 cup plain breadcrumbs
  • 2 tablespoons flaxseed meal mixed with 6 tablespoons warm water (or 2 large eggs)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon dried parsley
  • 1/2 cup ketchup (for glaze)
  • 1/4 cup packed brown sugar (for glaze)
  • 1 tablespoon apple cider vinegar (for glaze)
  • 1 teaspoon Worcestershire sauce (for glaze)
  • 1/2 teaspoon garlic powder (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with foil or parchment paper, leaving overhang.
  2. Make flaxseed gel: In a small bowl, combine 2 tablespoons flaxseed meal with 6 tablespoons warm water. Stir and let sit for 5 minutes until thickened.
  3. Optional: Sauté diced onion in a drizzle of olive oil over medium heat for 3-4 minutes until translucent. Let cool.
  4. In a large mixing bowl, combine ground beef, breadcrumbs, flaxseed gel (or beaten eggs), sautéed onion, minced garlic, Worcestershire sauce, ketchup, Dijon mustard, salt, pepper, thyme, and parsley. Mix gently with your hands until just combined.
  5. Transfer mixture to the lined loaf pan and press gently to distribute evenly, avoiding air pockets.
  6. Make glaze: In the same small bowl, whisk together 1/2 cup ketchup, 1/4 cup packed brown sugar, 1 tablespoon apple cider vinegar, 1 teaspoon Worcestershire sauce, and 1/2 teaspoon garlic powder until smooth.
  7. Spread half of the glaze over the top of the meatloaf.
  8. Bake for 45 minutes. Remove from oven and spread remaining glaze on top.
  9. Return to oven and bake for another 15-20 minutes, until internal temperature reaches 160°F (71°C).
  10. Let meatloaf rest in pan for 10 minutes, then lift out using foil overhang onto a cutting board. Rest another 5 minutes before slicing.
  11. Slice into 1-inch thick pieces and serve warm with extra pan juices or reserved glaze.

Notes

Don’t overmix the meat mixture to avoid dense meatloaf. Let the flaxseed gel sit the full 5 minutes. Use a meat thermometer for perfect doneness. Line the pan for easy cleanup. Let meatloaf rest before slicing to prevent crumbling. Double the glaze for extra to drizzle over servings.
