These kid-friendly cranberry brie bites are a quick and easy appetizer that combines creamy brie, tangy cranberry sauce, and flaky crescent roll dough. Perfect for parties and family gatherings, they come together in under 25 minutes and are a guaranteed crowd-pleaser.

Ingredients

Scale
  • 1 can (8 oz) refrigerated crescent roll dough
  • 4 oz brie cheese (about half a standard wheel)
  • 1/3 cup whole berry cranberry sauce
  • 1 tablespoon honey
  • 1/4 cup chopped pecans (optional)
  • 1 large egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • Fresh thyme leaves (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper.
  2. Using a small knife, carefully cut the rind off the brie cheese. Cut the brie into 24 small cubes, about 1/2 inch each. Set aside.
  3. In a small bowl, combine the cranberry sauce and honey. Stir until well mixed.
  4. Unroll the crescent roll dough onto a clean cutting board. If using perforated dough, press the seams together gently to create one smooth sheet. Cut the dough into 24 equal squares, about 2 inches each.
  5. Place a small spoonful (about 1/2 teaspoon) of the cranberry-honey mixture in the center of each dough square. Top with one cube of brie. If using pecans, sprinkle a few chopped pieces on top.
  6. Gently gather the four corners of each dough square and pinch them together at the top, forming a little pouch. Place each bite on the prepared baking sheet, spacing them about 1 inch apart.
  7. In a small bowl, whisk the egg with 1 tablespoon of water until well combined. Lightly brush the top of each bite with the egg wash.
  8. Bake for 12-15 minutes, or until the pastry is golden brown and puffed. Let them cool on the baking sheet for 2-3 minutes before serving.
  9. Transfer the bites to a serving platter and sprinkle with fresh thyme leaves if desired. Serve warm.

Notes

Don’t overfill the dough to prevent bursting. Keep the dough cold for flakier layers. Watch the oven closely to avoid overbaking. Let bites rest for 2-3 minutes after baking to prevent burns. Can be assembled up to 4 hours ahead and refrigerated before baking. Freeze unbaked bites for up to 3 months.
