These quick and easy cranberry orange bars are tender, tart-sweet, and topped with a creamy white chocolate drizzle. Perfect for weeknight desserts or holiday gatherings, they come together in under 45 minutes with simple ingredients.

Ingredients

Scale
  • ½ cup (1 stick or 113g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • 1 cup (about 100g) fresh or frozen cranberries (if frozen, do not thaw)
  • 1 tablespoon orange zest (from about 1 large orange)
  • 1 tablespoon all-purpose flour (for tossing cranberries)
  • ½ cup (85g) white chocolate chips or chopped white chocolate
  • 1 teaspoon coconut oil or vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. In a medium microwave-safe bowl, melt the butter in 20-second intervals. Let cool slightly.
  3. Add the granulated sugar to the melted butter and whisk until combined. Add the egg and vanilla extract, whisking until smooth and glossy, about 30 seconds.
  4. Sprinkle the flour, baking powder, and salt over the wet mixture. Stir with a rubber spatula until just combined (a few streaks of flour are okay).
  5. In a small bowl, toss the cranberries with 1 tablespoon of flour. Gently fold the floured cranberries and orange zest into the batter. The batter will be thick.
  6. Transfer the batter to the prepared pan and spread evenly. Bake on the middle rack for 22-26 minutes, until edges are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool the bars completely in the pan on a wire rack (about 1 hour).
  8. For the drizzle: Place white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth (60-80 seconds total).
  9. Drizzle the melted white chocolate over the cooled bars in a zigzag pattern. Let set at room temperature for about 20 minutes (or 10 minutes in the refrigerator).
  10. Lift the bars out using the parchment handles, slice into 9 or 16 squares, and serve.

Notes

Do not overmix the batter to avoid tough bars. Use room temperature egg to prevent butter from seizing. Flour the cranberries to prevent sinking. Cool completely before slicing for clean edges. Bars taste even better the next day.
