  • 1 teaspoon (3 g) instant yeast
  • 1 ½ cups (360 ml) warm water

  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon coarse sea salt flakes
  • Optional: ½ teaspoon garlic powder
  • Optional: semolina flour for dusting

Instructions

  1. In a large bowl, combine 3 cups (360 g) all-purpose flour, 1 teaspoon (3 g) instant yeast, and 1 teaspoon (5 g) fine sea salt. Stir well to distribute evenly (about 2 minutes).
  2. Add 1 ½ cups (360 ml) warm water and ¼ cup (60 ml) extra virgin olive oil. Stir with a wooden spoon or spatula until just combined; dough will be wet and sticky (about 3 minutes).
  3. Cover the bowl tightly with plastic wrap or a kitchen towel and let the dough rest at room temperature for 12 to 18 hours until bubbly and doubled in size.
  4. Generously oil a 12×16-inch rimmed baking pan with olive oil and optionally dust with semolina flour.
  5. Transfer the risen dough to the prepared pan. Wet your fingers and gently stretch and press the dough evenly across the pan. Rustic edges are fine (5-7 minutes).
  6. Cover loosely with a kitchen towel and let rise again for 30 to 45 minutes until puffy but not overproofed.
  7. Preheat oven to 450°F (230°C). Just before baking, press fingertips into the dough to create dimples. Drizzle with olive oil, sprinkle 2 tablespoons fresh rosemary and 1 tablespoon coarse sea salt flakes evenly on top. Optionally add garlic powder.
  8. Bake on the middle rack for 20 to 25 minutes until crust is golden brown and crispy, rotating pan halfway through.
  9. Remove from oven and let cool in pan for 10 minutes. Transfer to a wire rack to finish crisping. Slice and serve warm or at room temperature.

Do not knead the dough; it should be wet and sticky. Use instant yeast for convenience. Avoid cold water or hot water that kills yeast. Generous olive oil helps develop a crispy crust. Make dimples in the dough to trap oil and toppings. Watch the oven closely to avoid burning. Let bread cool before slicing to prevent tearing.
