A simple, hands-off slow cooker recipe featuring tender beef chuck roast cooked with ranch seasoning, pepperoncini peppers, and butter for a tangy, buttery, and melt-in-your-mouth pot roast.

  • 3 to 4 pounds beef chuck roast (well-marbled)
  • 1 packet (about 1 ounce / 28 grams) ranch seasoning mix
  • 1 packet (about 0.87 ounces / 25 grams) au jus gravy mix
  • 4 tablespoons (about 56 grams) unsalted butter, sliced
  • 6 to 8 pepperoncini peppers with some juice (about 100 grams)
  • 1 teaspoon garlic powder (optional)
  • Freshly ground black pepper, to taste
  • Salt, to taste

Instructions

  1. Pat the chuck roast dry using paper towels. Trim off any thick, excess fat but leave some marbling for flavor and tenderness. Season lightly with salt and freshly ground black pepper.
  2. Place the roast in the slow cooker. Sprinkle the ranch seasoning and au jus gravy mix evenly over the top and sides of the roast. Scatter the sliced butter pats over the roast, then tuck the pepperoncini peppers around and on top. Pour a few tablespoons of the pepperoncini juice over everything for extra tang.
  3. Cover and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the roast is fork-tender and shreddable. Avoid lifting the lid too often.
  4. Remove the roast onto a large plate or cutting board. Use two forks to shred the meat into bite-sized strands. Return the shredded beef to the slow cooker and stir it into the juices to soak up all the flavor.
  5. Taste the sauce and add salt or pepper if needed. If the sauce is too thin, remove a cup of liquid, whisk in a teaspoon of cornstarch, and stir it back into the slow cooker. Let it cook for 10 more minutes on high to thicken.

Notes

Do not open the slow cooker lid frequently to maintain heat and tenderness. Adjust pepperoncini quantity to taste. Butter can be substituted with olive oil or dairy-free margarine for a dairy-free option. For thicker sauce, use cornstarch slurry. Optional to add baby carrots or small potatoes at start of cooking. Instant Pot adaptation: pressure cook on high for 60 minutes with natural release.
