Ingredients

Scale
  • 6 cups (1.4 liters) whole milk
  • 1 cup (240 ml) heavy cream
  • 2 cups (340 grams) semi-sweet chocolate chips
  • ½ cup (40 grams) unsweetened cocoa powder
  • ½ cup (100 grams) granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon peppermint extract
  • ½ cup (about 60 grams) crushed peppermint candies, plus whole candy canes for stirring (optional)
  • 1 to 1½ cups (240–360 ml) your favorite spirit (peppermint schnapps, bourbon, rum, or coffee liqueur), added to individual cups
  • Optional toppings: mini marshmallows, whipped cream, chocolate shavings, caramel sauce

Instructions

  1. Prep the Peppermint (5 minutes): Place peppermint candies in a Ziploc bag and crush with a rolling pin or heavy pan into small pieces. Set aside.
  2. Make a Cocoa Slurry (5 minutes): In a small bowl, whisk together cocoa powder and granulated sugar. Add about ½ cup of the whole milk and whisk until smooth and lump-free.
  3. Combine in the Crockpot (2 minutes): Pour remaining milk and heavy cream into a 6-quart or larger slow cooker. Add cocoa slurry and semi-sweet chocolate chips. Stir to combine.
  4. Slow Cook on Low (2 hours): Cover and cook on LOW for 2 hours. After 1 hour, stir to help everything melt evenly.
  5. Add the Extracts (5 minutes): After 2 hours, stir in vanilla extract and peppermint extract. Taste and add more peppermint extract if desired (up to ¼ teaspoon more).
  6. Keep Warm Until Serving: Switch crockpot to WARM setting to keep hot chocolate at perfect drinking temperature.
  7. Serve and Spike (2 minutes per cup): Ladle hot chocolate into mugs. Let each guest add their own spirit (start with 1 ounce/2 tablespoons). Top with whipped cream, crushed peppermint, and a mini candy cane for stirring.

Notes

Do not cook on HIGH—milk can scorch and chocolate may seize. Always spike individual cups, not the crockpot, to accommodate all guests. Crush your own peppermint for the best flavor. Stir occasionally during cooking to prevent chocolate from settling.
