Ingredients

Scale
  • 1.5 lbs (680g) boneless, skinless chicken thighs
  • 2 cans (15 oz / 425g each) white beans (Great Northern or cannellini), drained and rinsed
  • 2 cups (300g) frozen corn
  • 4 cups (960ml) low-sodium chicken broth
  • 4 oz (113g) cream cheese, softened
  • 1 can (4 oz / 113g) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 2–3 fresh limes (juice and zest)
  • ½ cup fresh cilantro, chopped (for garnish)

Instructions

  1. Prep the aromatics: Dice the yellow onion and mince the garlic cloves.
  2. Layer the ingredients in the slow cooker: Place the chicken thighs in the bottom. Scatter the diced onion, minced garlic, and drained white beans over the top. Add the frozen corn and diced green chiles. Sprinkle with ground cumin, dried oregano, salt, and black pepper. Pour in the low-sodium chicken broth. Do not stir.
  3. Cook on low or high: Cover and cook on LOW for 6 hours or on HIGH for 4 hours, until the chicken is tender and shreds easily.
  4. Shred the chicken: Remove the chicken thighs from the slow cooker and shred with two forks. Return the shredded chicken to the slow cooker.
  5. Add the cream cheese: Cut the softened cream cheese into small cubes and add to the slow cooker. Stir gently until fully melted and incorporated.
  6. Finish with lime and cilantro: Squeeze the juice of 2-3 limes into the chili. Add about 1 teaspoon of lime zest if desired. Stir in half of the chopped cilantro. Taste and adjust salt and pepper as needed.
  7. Serve and garnish: Ladle the chili into bowls and top with remaining cilantro. Offer toppings like shredded cheese, crushed tortilla chips, sour cream, or avocado.

Notes

For extra flavor, sear the chicken thighs in a hot skillet before adding to the slow cooker. Use full-fat cream cheese for a smooth texture. Season at the end to control salt levels. This chili freezes well for up to 3 months.
