This crustless spinach and feta quiche is a quick, easy, and delicious meal that comes together in under 30 minutes. Perfect for breakfast, lunch, or dinner, it’s naturally gluten-free and low-carb.

Ingredients

Scale
  • 6 large eggs, room temperature
  • 5 ounces fresh baby spinach (about 3 big handfuls)
  • 4 ounces feta cheese, crumbled
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 1 medium shallot, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with butter or cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Add diced shallot and cook for 2-3 minutes until soft. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add spinach to the skillet in handfuls, tossing with tongs, until wilted (2-3 minutes). Remove from heat and let cool slightly.
  4. Transfer cooked spinach to a clean kitchen towel or paper towels. Roll up and squeeze firmly over the sink to remove excess moisture.
  5. In a large bowl, whisk together eggs, milk, heavy cream, salt, pepper, and nutmeg (if using) until frothy, about 30 seconds.
  6. Chop the squeezed spinach roughly and add to the egg mixture along with crumbled feta and sautéed shallot and garlic. Stir gently to combine.
  7. Pour the mixture into the prepared pie dish and spread evenly.
  8. Bake for 22-28 minutes, until edges are set and golden, and center is just slightly jiggly. A knife inserted near the center should come out clean.
  9. Let quiche rest on a wire rack for at least 5 minutes before slicing into 6 wedges. Serve warm.

Notes

Don’t skip squeezing the spinach dry to avoid a watery quiche. Use room-temperature eggs for a fluffier texture. Start checking for doneness at 22 minutes to prevent overbaking. Let the quiche rest for 5 minutes before slicing.
