Easy Forgotten Meringue Cookies with Chocolate Chips

forgotten meringue cookies with chocolate chips - featured image

Light, airy meringue cookies studded with mini chocolate chips that are baked using the ‘forgotten’ method—you simply put them in a hot oven, turn it off, and forget about them overnight. They’re crisp on the outside, slightly chewy in the middle, and practically foolproof.

Ingredients

Scale
  • 3 large egg whites, room temperature
  • ¾ cup (150g) granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cream of tartar
  • ⅓ cup (60g) mini chocolate chips
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper. Make sure your mixing bowl and beaters are completely clean and dry.
  2. Separate your eggs while they’re cold. Crack each egg carefully, letting the white fall into a small bowl, then transfer to your large mixing bowl. Let the whites sit at room temperature for about 10 minutes before whipping.
  3. Add the cream of tartar and salt to the egg whites. Begin beating on medium speed until foamy—about 2 minutes. Gradually increase to high speed and start adding the sugar, one tablespoon at a time, while the mixer runs.
  4. Continue beating until the mixture is glossy, thick, and holds stiff peaks—about 8-10 minutes total with a stand mixer on high speed. The texture should feel smooth, not gritty.
  5. Add the vanilla extract and beat for just 10 seconds to combine. Remove the bowl from the mixer and gently fold in the mini chocolate chips using a rubber spatula.
  6. Drop rounded tablespoons of meringue onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Place the baking sheet in the preheated oven. Immediately turn the oven OFF. Do not open the oven door for at least 6 hours, or ideally overnight.
  8. After 6-8 hours (or the next morning), open the oven and check your cookies. They should be dry to the touch, crisp on the outside, and easily lift off the parchment paper. If they’re still sticky or soft, leave them in the turned-off oven for another hour or two.

Notes

Make on a dry day for best results. Humidity can cause cookies to turn chewy. Store in an airtight container at room temperature for up to one week. Do not refrigerate. Freeze for up to 3 months.
