Ingredients

Scale
  • 2 cups broccoli florets, roughly chopped into small, uniform pieces
  • 1 cup cauliflower florets, chopped small
  • 1 large orange bell pepper, sliced into thin strips
  • 1 medium yellow bell pepper, sliced
  • 1 large cucumber, sliced into rounds or half-moons
  • 1 cup cherry tomatoes, halved
  • 2 medium carrots, cut into sticks or coins
  • 3–4 stalks celery, cut into 3-inch pieces
  • 1 cup ranch dressing (e.g., Hidden Valley)
  • 1 tablespoon pumpkin puree (optional, for color)
  • 1 small green bell pepper, cut into a stem shape (about 2 inches long, 1 inch wide)

Instructions

  1. Wash and dry all vegetables thoroughly. Pat everything dry with paper towels and let them air dry for 5 minutes if possible.
  2. Pour the ranch dressing into a small bowl. If using pumpkin puree, mix in 1 tablespoon until fully combined. Set the bowl in the center of your platter.
  3. Cut the green bell pepper into a stem shape about 2 inches long and 1 inch wide, with a slight curve at the top. Set aside.
  4. Chop the broccoli and cauliflower into small, uniform florets about 1 inch in size.
  5. Cut the orange and yellow bell peppers into thin strips about 1/4 inch wide and 2 inches long.
  6. Slice the cucumber into rounds, halve the cherry tomatoes, cut the carrots into sticks, and chop the celery into 3-inch pieces. Keep each vegetable type in separate piles.
  7. Start building the pumpkin by placing broccoli florets tightly around the dip bowl in a circular pattern. Press them gently against each other so there are no gaps.
  8. Add small cauliflower florets between the broccoli pieces to fill any empty spaces.
  9. Tuck orange and yellow pepper strips throughout the broccoli, angling them outward slightly to create pumpkin ridges.
  10. Arrange cucumber rounds and carrot sticks around the perimeter of the platter, slightly overlapping, to define the pumpkin shape.
  11. Scatter cherry tomatoes and celery in any remaining gaps, keeping the overall shape round and pumpkin-like.
  12. Place the green bell pepper stem at the top of the pumpkin, right above the dip bowl. Angle it slightly upward.
  13. Step back and fill in any bare spots with extra broccoli or pepper strips. The goal is a dense, full appearance with no platter visible.
  14. Serve immediately or cover with plastic wrap and refrigerate for up to 4 hours.

Notes

Prep all vegetables the night before and store in separate zip-top bags in the fridge for quick assembly. The dip bowl should be about 4-5 inches in diameter. Leave about 1/2 inch of space between vegetables and the dip bowl for easy access. For a dairy-free option, use vegan ranch dressing. To revive vegetables that have lost their crunch, soak in ice water for 10 minutes and pat dry.
